The chef serves a menu which is respectful of the products and capitalises on their flavours. With careful attention to the quality of those products, Pascal has also been at pains to highlight the richness of the Belgian culinary heritage, whether Walloon, Flemish or Bruxellois. This is why one third of the dishes on the menu are prepared using ingredients sourced within a maximum radius of 135 km.
